Ingredients
Serves 1 to 2
For the porridge base:
- 2 Dawn’s Awakening teabags
- 400ml boiling water
- 80g fine oat flour, or 60g dried ogi (fermented corn porridge) powder
- 1 tablespoon powdered dates or raw honey, to sweeten
- Pinch of sea salt
For the toppings (choose what feels right):
- 1 tablespoon fresh moringa powder (deepens the green and the nutrition)
- Sliced banana or fresh mango
- 2 tablespoons coconut milk, stirred through at the end
- A few pumpkin seeds or crushed groundnuts for texture
- Extra drizzle of honey
Method
Step 1 — Brew the tea strong Steep 2 Dawn’s Awakening teabags in 400ml of freshly boiled water for 6 to 8 minutes. You want a strong brew — this is the cooking liquid, and its flavour will be distributed through the porridge. Remove the teabags and set the brewed tea aside.
Step 2 — Prepare your base If using oat flour, add it directly to a cold saucepan before turning on the heat. If using ogi powder, dissolve it in a small amount of cold water first to avoid lumps, then add to the pan.
Step 3 — Combine and cook Pour the brewed Dawn’s Awakening over the oat flour or dissolved ogi in the saucepan. Turn the heat to medium-low. Stir continuously as the porridge begins to thicken — 5 to 8 minutes for oats, 3 to 4 minutes for ogi. The texture should be smooth and thick enough to coat the back of a spoon. Add a pinch of sea salt.
Step 4 — Sweeten Remove from heat. Stir in powdered dates or honey. Taste and adjust. The moringa in the blend will give the porridge a very subtle earthiness — the sweetness should balance this, not overwhelm it.
Step 5 — Finish and serve Pour into a bowl. If using fresh moringa powder, stir it through now while the porridge is still hot so it integrates fully. Add your chosen toppings. Drizzle coconut milk over the top if using — it creates a beautiful contrast against the pale green of the moringa.
